Alex Boon started his hospo career as a chef’s apprentice fresh out of high school and has been hooked ever since. A true creative at heart, Alex has represented Australia on the world stage on multiple occasions, and now owns and operates his own cocktail and oyster bar, Pearl Diver, in Melbourne CBD.

What first drew you to bartending, and what keeps you passionate about it today? 

I enjoy the interaction with people, both working with them and serving them. And the creative side to making drinks. I think experiencing what other creatives do, not just in our line of work, is what keeps me passionate about what I do behind the bar
