Darwin, born and raised, Declan got his first serious bartending job in 2018 at Bramble, Edinburgh. Stints in London and Copenhagen promptly followed this, after which he decided to return home during the pandemic. Now, he is the proud host and resident bar nerd at Anneliese Grazioli’s Hanky Panky Lounge.

What first drew you to bartending, and what keeps you passionate about it today?

Working hospo from the get-go gave me an appreciation of both FoH and BoH. I found that Bartending blended those in an exciting and challenging way. This blend and developing my hospitality, technical skill, and knowledge keeps it an exciting career.
